Pulled Pork Pimento Mac and Cheese

.½ pound Pork Butt (Striplings General Store)
¼ cup Coffee Rub (Fire & Flavor)
1 quart pork stock
1 Tbsp. salt and pepper
8 oz. rotini pasta (cooked)
1 Tbsp. unsalted butter
2 Tbsp. Chops and Hops Pimento cheese
½ cup heavy cream
- Marinate pork butt with coffee rub overnight.
- Braise pork butt in pork stock and finish in oven covered on 295 degrees.
- Melt butter in sauté pan.
- Add in cream and pimento cheese and reduce on medium until thick.
- Add in rotini and pulled pork and toss thoroughly.
- Season with salt and pepper.
